Soften the beans in lightly salted water overnight and boil them till they are soft in the same water the next day. Strain away the water and keep some of it.
Fry the garlic and onion in butter for a few minutes in a pot and add the skinned tomatoes and some of the water from the beans. Add salt and pepper to taste, then add the beans.
Place the slices of ham on top and let it all simmer under a tight lid until the ham is tender. Put slices of orange and cloves in between the ham. Let it all simmer for a fem minutes, then stir well.
Mix the orange juice and demarara sugar until the sugar has dissolved then pour on top. Place the pot in a heated owen until the sugar and juice have glazed slightly.
