Sandwiches like the ones seen on the picture to the left is great on cold winter evenings.
Fry square cut white bread in butter or margarine. Spread a layer of anchovies on the sandwich and then a row of thin slices of tomatoes across the top. Add a rich layer of grated parmesan cheese. Gratinate in a hot owen.
Toast "Birgir Jarl"
Fry square cut white bread in butter or margarine and cover them with butter frizzled spinach. Ad a layer of cream stewed diced chicken. Top it with a layer of cheddar. Gratinate in hot owen.
Mayonnaise Gratinated Shrimp Croissants
Cut the croissants in half and spread with butter or margarine. Ad a row of peeled shrimps covered in a mix of mayonnaise and curry. Top with a thin layer of grated cheese. Gratinete in hot owen.

margarine and cover with a few rashes of bacon. Top with a slice of pineapple and a cocktail berry. Gratinate in hot owen.
Cold Open Faced Sandwiches
On the picture at the top her you can see a collection of very nice open faced sandwiches. Most of them are quite easily recognized, fried plaice with champignons, smoked eel with scrambled eggs, roast beef with cucumbers and tomatoes, cold, broiled salmon with scrambled eggs, sardines on a bed of Danish caviar, ham with a red cabbage and prunes, ox tongue with cold horse radish cream and beef tartar with a raw egg yolk. But a few that might need a little explanation;
Smoked Eel With Scrambled Eggs.
Spread white bread with butter or margarine and cover with fresh lettuce. Cut a piece of smoked eel the same length as the sandwich and place it to one side of the slice, then fill the other with scrambled eggs.
Beef Tartar With Raw Egg Yolk
Spread a white or dark slice of bread with butter or margarine the add a half inch layer of raw freshly ground beef. Make a dent in the middle of the meat and place a raw egg yolk in it. Garnish with flakes of horse radish, capers and chopped, raw onion.
Roast Beef With Grated Horse Radish And Pickled Onions .
Spread a white or dark slice of bread with butter or margarine then ad 2 – 3 thin slices of roast beef. Garnish with grated horse radish and small pickled onions.
Fried Fillet of Plaice With Champignons
Spread a slice of white bread with butter or margarine and cover with fresh lettuce. Place a fried fillet of plaice on top and garnish with fried Champignons and a thin slice of lemon.
