Mix 1 1/2 cups of ground ham with I cup of thick, white sauce. Season the mixture to taste with salt and freshly ground black pepper. Add 1 tablespoon lemon juice, 1 hard boiled egg chopped fine, and 2 teaspoons chopped parsley. Spread out on a plate and allow it to cool. When cool, mould the mixture into croquettes of the usual size and shape, dip each croquette into a well-beaten egg. roll in bread crumbs and fry in deep fat to a rich, golden brown. Drain off grease by placing on brown paper. After draining remove to a hot platter, garnish with parsley and with bananas cut into halves, crosswise, and fried in hot butter.
